One way to make vegan cream cheese is to “milk” almonds!
Vegan Cream Cheese Ingredients:
- 250 g almonds
- water
- salt
- Lemon juice from one lemon
- to taste: herbs

- Blender
- Sieve
- Kitchen towel
- Passing or cheesecloth
1. Vegan Cream Cheese made from Almonds: Preparing the Almonds
To make your own vegan cream cheese, you first need to blanch the almonds. To do this, place the whole almonds in a bowl or saucepan and pour boiling water over them. After the almonds have been in the hot water for 1 minute, they must be immediately rinsed in cold water. Now, leave the almonds in the water for about 2 hours. You should now be able to easily squeeze the almonds out of their peel.
2. Vegan Cream Cheese made from Almonds: Milk the Almonds
Next, place the peeled almonds in a blender and add enough water to cover the almonds. If you like, you can add a pinch of salt. Then, blend the almonds with the water until you have a homogeneous mixture.
Now, you need a saucepan, a sieve, and a clean kitchen towel or straining cloth. Place the sieve in the pot and the tea towel in the sieve. Next, pour the almond and water mixture into the kitchen towel and wring out the liquid.
You can use the almond flour for another dish. We need the liquid or almond milk for the vegan cream cheese.
3. Vegan Cream Cheese made from Almonds: Cook, curdle and enjoy
The liquid you have just obtained must now simmer for a few minutes. Before the liquid boils, turn off the heat and add the lemon juice. The liquid should now start to thicken. When the mixture has set and cooled, pour it into your cheesecloth. The remaining liquid should now drip off.
To make it a little easier, you can place a lightweight on the cheesecloth. After 2 hours in the fridge, transfer your vegan cream cheese from the cheesecloth to a bowl and enjoy with bread. If you want to refine your homemade plant-based cheese spread, add herbs such as chives.
