Mozzarella can be used in many ways: with bread, as a tomato mozzarella salad, etc. As someone who follows a vegan diet, you shouldn’t have to go without these delicious dishes. Although there are now many plant-based alternatives, you often don’t know what’s in the products you buy. A great way is to make vegan mozzarella yourself. This recipe is quick, easy, and without cashews.
Vegan Mozzarella Ingredients
For one portion or ball of vegan mozzarella, you need
- 100 ml unsweetened plant-based drink (e.g., soy, pea, almond)
- 2.5 tbsp cornflour
- 1 tsp. salt
- 2 tbsp cooking oil
- 125 ml unsweetened, plant-based yogurt alternative
- 1 tsp lemon juice
Making Vegan Mozzarella
Step #1:
First, add the unsweetened plant-based drink, cooking oil, cornstarch, salt, and lemon juice to a saucepan and bring the mixture to a boil, stirring constantly. As soon as a thick mixture has formed, remove the pan from the heat. Now, fold in the plant-based yogurt alternative with a whisk.
Step #2:
Next, pour the slightly cooled mixture onto a cling film and twist it into a ball. Now place the ball in a bowl of cold water and put it in the fridge overnight.
Remove the ball from the cling film the next day, and use your homemade vegan mozzarella as you wish!
